I have a love/hate relationship with pinterest recipes. They always look amazing but the instructions seem to lie. This was the previous pinner’s comments.
“4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). *Wow this girl has some serious ADHD… oooh look shiney*. Arrange in 9×13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour. Enjoy!” *indicate my thoughts on her comments.
Dinner time was swiftly approaching, and I was mentally calculating how to adjust this recipe to feed just Andy and I with minimal left overs. A couple discrepancies with pinterest’s comments and picture…. what are “new” potatoes…. 350 degrees for only an hour does NOT heat chicken to the recommend safe temp of 165 degrees… nor does it thoroughly bake potatoes. Almost 2 hours later, the new and improved instructions should read as follows:
“1-2 raw chicken breasts, potatoes (cut into bite size pieces), green beans (any veggie would work). Arrange in a 11×7 dish. Sprinkle with half a packet of Italian dressing mix (most over the chicken and potatoes), then top with a melted stick of butter (most over the potatoes and a touch over the chicken and beans). Cover with foil and bake at 400 for 1 hour (or until chicken and potatoes are fully cooked). Enjoy!”
Regardless of the process, this dish was yummy! And I really appreciate how simple it is to prepare. I’ll be putting it on next month’s menu.. and will post any additional changes and pictures at that time.
